Buffalo Mac and Cheese Grilled Cheese

Ingredients

  • 1 box macaroni and cheese
  • 6 Tablespoons Challenge Buffalo Snack Spread, divided
  • ¼ cup whole milk
  • 2 cups shredded cheddar cheese, divided
  • 6 slices cooked bacon, chopped
  • 8 slices brioche

Directions

    Bring a medium pot of salted water to a boil. Add macaroni and cook until al dente, about 8 minutes. Drain pasta and set aside.

    Melt 2 tablespoons Buffalo Snack Spread in the same pot over low heat, then whisk in cheese packet and milk. Add 1 cup shredded cheese and stir until melted. Remove from heat. Return macaroni to pot and mix to combine. Stir in bacon and set aside.

    Arrange 8 slices of bread on a cutting board and spread with remaining Buffalo Snack Spread, about 1/2 tablespoon each. Flip 4 of the slices and spoon macaroni and cheese on top. Sprinkle with cheddar cheese then top with remaining bread slices, buttered side up.

    Heat a large skillet over medium-low heat. Carefully transfer one sandwich to the skillet, cover skillet and cook until bread is golden and cheese is starting to melt, about 5 minutes. Flip, cover and cook another 4- 5 minutes, until cheese is fully melted. Repeat with remaining 3 sandwiches. Serve hot.
