BBQ Brisket Sliders with Avocado and Red Onion
Serve these BBQ brisket sliders at your next gathering — either as an appetizer, a snack, or a main dish — and watch them quickly disappear. We love the contrast of soft King’s Hawaiian Savory Rolls with the rich umami flavors of BBQ beef.
- ¼ cup brown sugar
- 1 Tablespoon paprika powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 teaspoons salt
- ½ teaspoon black pepper
- 2 pounds beef brisket
- 2 cups beef stock
- 1 cup barbeque sauce
- 1 package (12-count) King’s Hawaiian Savory Butter Rolls
- ½ Tablespoon Challenge Lactose Free Clarified Butter with Canola Oil
- 3-4 avocados, sliced
- ½ cup thinly sliced red onion
1Preheat oven to 350°F. In a small bowl, combine sugar, paprika, onion powder, garlic powder, salt and pepper. Rub all over both sides of the brisket and place in a cast iron pan or small roasting pan. Roast, uncovered, for 1 hour.
2Add beef stock and enough water to bring the amount of liquid halfway up the side of the meat. Lower oven to 300°F, cover pan tightly with foil and continue cooking for 3-3 ½ hours, or until fork-tender.
3Let rest for 15 minutes, then transfer meat to a cutting board and slice against the grain in 2-inch strips. Transfer to a large bowl, shred with 2 forks and toss with ½ cup of the cooking liquid and barbecue sauce.
4To assemble sliders, split King’s Hawaiian Savory Butter Rolls in half and spread Challenge Lactose Free Clarified Butter with Canola Oil on both cut sides of the bun. Layer bottom bun with a few slices of avocado, a generous pile of brisket, and 2-3 red onion slices. Top with slider bun and serve.
