- 2 sticks Unsalted Challenge butter, softened and cubed
- 1 vanilla bean, halved lengthwise and seeds scraped
- 2 Tablespoons honey
- 2 Tablespoons powdered sugar
- ¼ teaspoon kosher salt, plus more to taste
1Combine butter, vanilla bean seeds, honey, powdered sugar and salt in the bowl of a stand mixer fitted with a paddle attachment. Beat on medium speed until smooth and fluffy, scraping down the bowl as needed.
2If using as a spread, transfer to a bowl and use while soft. Otherwise, spoon onto parchment paper or plastic wrap and roll into a tight log. Refrigerate until firm.
