Hard Boiled Egg Oatmeal Cookies
Oatmeal cookies made with hard-boiled eggs? Absolutely. When diced fine, hard-boiled eggs function the same way raw eggs do, making for sweet, wholesome oatmeal cookies. Try these with vanilla ice cream to make a delicious ice cream sandwich.

Ingredients
- 1 cup (2 sticks) Challenge Butter, softened
- ¾ cup brown sugar
- ¾ cup granulated sugar
- 2 hard boiled large eggs, peeled and finely diced
- ¾ teaspoon salt
- 1 ⅓ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon pure vanilla
- 3 cups old fashioned rolled oats
Directions

1Preheat oven to 350˚F.

2Cream butter and add sugars: beat until light and fluffy.

3Add finely diced eggs and salt and beat until well mixed.

4Combine flour, and baking soda and fold into creamed mixture: add vanilla, then beat until well blended.

5Stir in oats.

6Drop by medium cookie scoop or rounded tablespoon onto parchment lined or lightly buttered baking sheet.

7Bake 10 to 12 minutes or until golden brown. Let cookies cool on pan for 5 minutes before transferring to cooling rack.
