Thickening Soups or Sauces

Make them richer and creamier.

Instead of adding dry flour to a soup or sauce, which can sometimes cause lumping, combine softened butter with an equal amount of flour and knead with a fork or by hand.

The resulting mixture (called Beurre Manié) may be added in small amounts as needed to a simmering liquid. The result will be additional thickness while making your soups or sauces richer and creamier as well.
