Thickening Soups or Sauces

Make them richer and creamier.

Instead of adding dry flour to a soup or sauce, which can sometimes cause lumping, create Beurre Manié (a butter and flour mixture) and gradually add it in small amounts to a simmering soup or sauce, as needed. It will thicken your liquids and make them richer and creamier tasting.

    Combine softened butter with an equal amount of flour and mix together with a fork or by hand.

    The resulting mixture is called Beurre Manié and may be added, in small amounts or as needed, to the simmering liquid.

    The result will be added thickness, which will also make your soups or sauces richer and creamier.
