Zucchini Linguini
Better than standard mac ‘n cheese, this pasta dish incorporates nutritious zucchini, which is loaded with Vitamin C, A and potassium.
Ingredients
- ½ cup Challenge Butter (one stick)
- 6 medium-sized zucchini, shredded (about 5 cups)
- 3 large cloves garlic, minced
- ¼ cup parsley, chopped
- ½ cup grated Parmesan cheese
- 8 oz. dry linguine (or 10-12 oz. fresh linguine)
- Salt & freshly ground pepper to taste
Directions
Step 1
Heat butter in a wide frying pan over medium heat. Add zucchini and garlic. Cook, stirring until zucchini is tender (about 5 minutes). Reduce heat.
Step 2
While zucchini is cooking, cook linguini according to package directions. Drain well.
Step 3
To zucchini mixture, add parsley, Parmesan cheese and the cooked pasta. Mix lightly, using 2 forks or spoons. Season to taste with salt and pepper. Offer additional Parmesan cheese as a topping.
