3 small cauliflower heads

¾ cup Challenge Buffalo Snack Spread, softened, plus more for serving

flaky salt, for serving

blue cheese dressing, for dipping

Remove the outer leaves from the cauliflower head and trim the stem flat. Slice the cauliflower head in half lengthwise, through the center. Cut a 1 ½-inch thick steak from each half; save remaining florets for another use. Place the 6 steaks on a baking sheet.

Preheat grill to medium heat and lightly oil the grate.

Brush steaks all over with the Buffalo Snack Spread, about 2 tablespoons each. Place steaks on the grill, buttered side down and grill for 5 minutes. Carefully flip and grill another 5- 7 minutes, or until golden brown and lightly charred.

Transfer to a serving platter, brush with more Buffalo Snack Spread, sprinkle with cilantro and flaky salt. Serve warm with your favorite blue cheese dressing.
