White Truffle Beurre Blanc

Ingredients

Ingredients: 
  • ½ lb. (1 cup) Challenge Unsalted Butter
  • 1½ cups white wine
  • ½ cup sherry
  • 1 oz. shallots
  • ½ oz. garlic
  • 1 ea bay leaf
  • 1 Teaspoon thyme
  • 2 cups cream
  • 1 Tablespoon white truffle oil
  • ½ oz. black truffle shavings

Directions

Reduce wine, sherry, shallots, garlic, bay leaf, thyme by ¾. Add cream and reduce by ½. Add truffles; whisk in butter and truffle oil. Salt and pepper to taste.

Yield:

Approximately 8-10 (2 oz.) servings
