Citrus Butter

Ingredients
- 2 sticks Unsalted Challenge Butter, softened and cubed
- zest of ½ an orange
- zest of 1 lime
- zest of 1 lemon
- 2 Tablespoons orange marmalade
- ¼ teaspoon kosher salt, plus more to taste
Directions

1Combine butter, citrus zest, orange marmalade and salt in the bowl of a stand mixer fitted with a paddle attachment. Beat on medium speed until combined, scraping down the bowl as needed.

2If using as a spread, transfer to a bowl and use while soft. Otherwise, spoon onto parchment paper or plastic wrap and roll into a tight log. Refrigerate until firm.

!Citrus butter is great on seared or poached seafood, roast chicken, roasted vegetables (green beans, broccoli, brussels sprouts) as well as baked goods such as croissants, brioche, scones, muffins.
