Apple Cranberry Cobbler

Ingredients

  • 1½ cups chunky applesauce
  • ¼ cup brown sugar, packed
  • 2 Tablespoons all-purpose flour
  • 1 Tablespoon lemon juice
  • 1 (16 oz.) can whole berry cranberry sauce
  • 1 cup all-purpose flour
  • 1 Tablespoon granulated sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 3 Tablespoons Challenge Butter
  • ½ cup low-fat milk
  • 2 Tablespoons toasted, slivered almonds

Directions

Preheat oven to 400° F. In medium saucepan, combine applesauce, brown sugar, 2 Tablespoons flour and lemon juice. Cook and stir until thickened and bubbly. Stir in cranberry sauce and heat through. Pour into an ungreased 8" x 8" baking pan or 2-quart casserole. Measure 1 cup flour, granulated sugar, baking powder and salt into a bowl. Add 3 Tablespoons butter and cut in butter with pastry blender or 2 knives, 8-10 times. Stir in milk and almonds until dough holds together. Drop 9 heaping Tablespoonfuls of dough onto hot fruit.
