Hard Boiled Egg Oatmeal Cookies

Ingredients

  • 1 cup (2 sticks) Challenge Butter, softened
  • ¾ cup brown sugar
  • ¾ cup granulated sugar
  • 2 hard boiled large eggs, peeled and finely diced
  • ¾ teaspoon salt
  • 1 ⅓ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon pure vanilla
  • 3 cups old fashioned rolled oats

    Preheat oven to 350˚F.

    Cream butter and add sugars: beat until light and fluffy.

    Add finely diced eggs and salt and beat until well mixed.

    Combine flour, and baking soda and fold into creamed mixture: add vanilla, then beat until well blended.

    Stir in oats.

    Drop by medium cookie scoop or rounded tablespoon onto parchment lined or lightly buttered baking sheet.

    Bake 10 to 12 minutes or until golden brown. Let cookies cool on pan for 5 minutes before transferring to cooling rack.
