Strawberry Cream Cheese Icing


2 cups (24 cupcakes)




  • 1 package (8 oz) Challenge Cream Cheese
  • 3 Tablespoons Challenge Butter, softened
  • ¼ cup strawberries, chopped
  • 2½-3 cups powdered sugar

    Beat cream cheese and butter until blended.

    Sift sugar to remove lumps and blend a portion at a time cream cheese mixture. Beat until just smooth after each addition.

    When about half the sugar is added, add the chopped strawberries. Add just enough additional sugar to get the desired spreading consistency.

    Be sure strawberries are patted dry to remove excess water before chopping. If using 1 tub (8 oz) Challenge Strawberry Cream Cheese Spread in place of strawberries and regular cream cheese, reduce sugar by about ½ cup.
