Pepper Jack Waffles with Bacon, Avocado, Fried Egg and Cilantro Aioli Drizzle
For those who prefer a savory breakfast over a sweet one, these cheesy waffles fit the bill. Think of the waffle in this case as an English muffin for a breakfast sandwich: eggs, bacon, avocado and cilantro give the dish its Latin accent.

Cilantro Aioli Drizzle
- ½ cup olive oil
- ½ cup fresh cilantro leaves
- ½ jalapeno, seeds and membrane removed
- 1 garlic clove
- 2 Tablespoons lime juice
- ¼ teaspoon ground cumin
- ¼ teaspoon salt
Pepper Jack Waffles
- 2 eggs, beaten
- 1 ¾ cups milk
- ½ cup (1 stick) Challenge Butter, melted
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 Tablespoon sugar
- ½ teaspoon salt
- ½ shredded cup pepper jack (or sharp cheddar)
Toppings
- 8 slices of bacon, cooked crisp
- 4 eggs, fried
- 1 avocado, sliced
Cilantro Aioli Drizzle

1For Cilantro Aioli Drizzle, blend all ingredients together in a blender or food processor until smooth. Can make ahead and store in a covered container in the refrigerator.
Pepper Jack Waffles

1Preheat waffle iron.

2For waffles, combine all wet ingredients in a small bowl. Combine all dry ingredients in medium bowl. Pour wet ingredients into bowl with dry ingredients and mix together.

3Pour waffle batter onto center of hot waffle iron and bake about 5 minutes.

4Remove waffles carefully and top with bacon, fried egg, sliced avocado and a drizzle of cilantro aioli. Serve immediately.
