Cinnamon Apple Oatmeal

Ingredients
- 4 Tablespoons Challenge Spreadable Butter with Avocado Oil, divided
- 2 apples, peeled and diced
- 2 Tablespoons brown sugar
- ¾ teaspoon ground cinnamon, divided
- Kosher salt
- 2 Tablespoons maple syrup
- 2 cups whole milk
- 2 cups whole rolled oats
Directions

1Melt 2 tablespoons Challenge Spreadable Butter in a medium skillet set over medium-high heat. Add apples, brown sugar, ¼ teaspoon cinnamon and a pinch of salt. Cook, stirring often, until apples are tender and syrupy, about 5 minutes. Transfer ¼ cup of apples to large saucepan. Stir maple syrup in to remaining apples and set aside for topping.

2Combine whole milk, 1 cup water, oats, ¾ teaspoon kosher salt and remaining ½ teaspoon cinnamon to saucepan with apples. Bring to a boil, reduce to a simmer and cook until oats are tender and mixture has thickened, about 10 minutes.

3Divide oatmeal across 4 shallow bowls. Spoon reserved apple mixture over top and finish with a smear of Challenge Spreadable Butter.
