Chocolate Waffles with Berries and Cream Cheese Syrup

Chocolate Waffles

  • 2 eggs
  • 2 cups milk
  • ½ cup (1 stick) Challenge Dairy Butter, melted
  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 4 teaspoons baking powder
  • 1 Tablespoon sugar
  • ½ teaspoon salt
  • 1 cup fresh raspberries or sliced strawberries

Cream Cheese Syrup

  • 4 ounces Challenge Dairy Cream Cheese, softened
  • 4 Tablespoons Challenge Dairy Butter, softened
  • 1 ½ cups confectioners sugar
  • 1 teaspoon vanilla extract
  • ½ cup whole milk

Chocolate Waffles

    Heat waffle iron.

    Beat eggs in medium bowl, using hand beater, until fluffy. Add milk, butter, flour, cocoa powder, baking powder, sugar, and salt to bowl. Beat waffle batter until smooth.

    Pour batter from cup or pitcher onto center of hot waffle iron. Bake about 5 minutes or until steaming stops.

    Remove waffle carefully and serve with berries and cream cheese syrup.

Cream Cheese Syrup

    To make the syrup, beat the cream cheese and butter together in a large bowl with a hand mixer until smooth. Beat in the confectioners' sugar, then add the vanilla and milk. Beat until the syrup is smooth and set aside.
