Easy Spinach Squares

Ingredients

Ingredients: 
  • 1 (10 oz.) package frozen chopped spinach
  • ½ cup (1 stick) Challenge Butter
  • 3 large eggs, beaten
  • 1 cup milk
  • ½ pound Sharp Cheddar cheese, grated
  • 1 cup flour
  • 1 cup chopped onion
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Directions

Cook spinach according to package directions and drain. Preheat oven to 350°F. Melt butter in 13” x 9” baking pan (careful not to let it burn). Remove from oven. Combine remaining ingredients with spinach and mix well. Turn into pan with melted butter, stirring in butter and spreading evenly. Bake 30 minutes. Cool 5 minutes. Cut into large 3” squares to serve as a side dish or into 1½” squares to serve as an appetizer.

Yield: 12 large squares or about 40 small ones.
