Cheesy Sausage Stuffed Mushrooms

Ingredients

  1. 16 oz. Baby Portabello (Cremini) mushrooms
  2. ½ pound lean ground pork
  3. ¼ teaspoon ground chipotle chile
  4. 2 teaspoons Beau Monde seasoning
  5. ¼ teaspoon fennel seed
  6. ½ cup (1 stick) Challenge Butter, divided
  7. ½ cup shredded Mozzarella or Italian cheese blend, divided
  8. ¼ cup bread crumbs

Directions

  1. Step 1

    Preheat oven to 350°F. Wipe off mushrooms and remove stems. Save stems to be used for filling. Place caps in a baking dish.

  2. Step 2

    In a small sauté pan, combine ground pork, with spices. Cook over medium heat until cooked through. (2 Italian sausages with casings removed can be substituted for ground pork and seasonings.)

  3. Step 3

    In a food processor, place mushroom stems, ¼ cup butter, ¼ cup cheese, and bread crumbs. Pulse until it comes together.

  4. Step 4

    Add cooked pork to the food processor mixture. Spoon mixture into mushroom caps. Sprinkle remaining ¼ cup cheese over mushrooms.

  5. Step 5

    Melt remaining ¼ cup butter and pour over mushroom caps. Bake for 15 to 20 minutes. Serve hot.
